I really like cupcakes. And, I really like baking. And eating. When I read on the cupcake project about an ice cream cupcake competition sponsored by TCP and scoopalicious I wanted to enter my first baking competition. Here's my cupcake. I call it:
Want S'more?
Chocolate chocolate chip cupcakes
All warm and gooey
Frost with graham cracker cream cheese frosting
Drizzled with homemade marshmallow cream
Filled with Breyers S'mores Blast Ice Cream (go get some. right. now.)
On my favorite dessert plates :)

Recipe:
Chocolate Chocolate Chip Cupcakes
*adapted from the Cupcake Project*
Makes 18 cupcakes
1/2 cup (1 stick) unsalted butter
1-1/4 cups sugar
2 large eggs
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
1/2 cup milk
1 teaspoons vanilla
1 cup mini semi-sweet chocolate chips
Preheat the over to 350 degrees
In a large bowl
Cream together butter and sugar
Add eggs, mix together
Add milk and vanilla
In a separate large bowl mix together the dry ingredients.
Add half to the the butter/sugar mixture and mix until combined
Add the rest of the dry ingredients and mix until combined.
Add Chocolate Chips and mix until *just* combined.
Bake for 20-25 minutes.
Graham Cracker Cream Cheese Icing

1/4 cup unsalted butter, room temperature
1 stick cream cheese, room temperature
2 1/2 cups powdered sugar
1tbsp vanilla
1 1/2 cups (or one sleeve) crushed graham crackers
Mix together butter and cream cheese until combined
Add Vanilla and combine
Add Powdered Sugar 1/2 cup at a time and combine
Add Graham Crackers and mix until just combined
Pipe on cupcakes
Marshmallow Cream
3 egg whites, room temperature
2 cups light corn syrup
1/4 tsp salt
2 cups powdered sugar
1 tbsp vanilla
Using a whisk attachment combine egg whites, corn syrup, and salt.
Mix on high for 5 minutes, or until ingredients double in size.
Mix in powdered sugar and vanilla.
Drizzle onto cupcakes.
